Tri-Tip on a Traeger

We stumbled upon a pre-marinated (Sant Maria) Tri-Tip from Costco, this was the perfect time to try out my new Traeger Silverton 620 from Costco

The cook was very easy and simple, preheat the Trager to about 220F, then drop the Tri-Tip onto the grill grates, insert the Meat Probe, and set the probe to 115F or 120F, close the lid and keep checking the Temperature periodically

Once the Tri-Tip has reached the desired internal temperature, pull the Tri-Tip off the Grill and wrap in Aluminum Foil, this will help to keep the temperature in the Tri-Tip, while you turn up the Trager to 500F, once the Trager has reached close to 500F, take the Tri-Tip out of the Aluminum Foil and place back onto the grill grates, you should hear the the meat starting to sear

Put the Meat Probe back into the Tri-Tip, and set this for desired doneness, we usually set either 130F or 135F depending on who we might be cooking for, after about 5 minutes, flip the Tri-Tip over to sear both sides, after another 5 minutes, you should be getting close to done, you can turn or flip the Tri-Tip again, then leave to reach the desired temperature

Pull the Tri-Tip off the Grill, and let it rest for 10 minutes, it can be tempting to start eating it immediately, waiting that last 10 minutes is worth the wait, once rested, start slicing, against the grain, this can be tricky on a Tri-Tip as you essentially have 2 cuts of meat, I’ll try to cut the meat where the 2 direction grains meat, and then I can slice each part against the grain

Serve up the meat with whatever side you like, and enjoy the family feast
