Vodka Shelter in Place, well....... its just good

Okay, parents out there navigating through the Covid-19 "shelter in place" in California, I've found solace in crafting cocktails. Alongside baking, cocktails have become my preferred way to unwind. Enter my latest creation: a Keto-Low-Carb drink perfect for the current situation, aptly named the "shelter in place" drink. This concoction features Costco's French-made Vodka, fresh or frozen strawberries, a hint of mint, zesty limes, and the delightful sweetness of Monk Fruit – my trusted low-carb sugar substitute. If Monk Fruit isn't on hand, Stevia can be a suitable alternative, but be cautious, as it packs a sweeter punch. Using the Vitamix Aer, a game-changing tool, simply toss all ingredients in for a hassle-free blend that delivers perfectly muddled flavors. While this accessory may have a price tag, the savings from enjoying bar-worthy cocktails at home versus the steep restaurant prices make it a worthy investment. Dive into a glass of this concoction on a Friday night and savor both the taste and the savings. Cheers to homemade mixology!

Ingredients

* 2 ounces vodka

* 2 fresh limes

* 6 leaves of mint (optional)

* 5 fresh or frozen strawberries

* 1 Tablespoon of Monk Fruit or 6 drops of Stevia. Start slowly with the Stevia and add one drop at a time to taste

* Club Soda to top off (optional)

* Vitamix

* Vitamix Aer

* Steel Straw

Place all ingredients in the Vitamix Aer and muddle for about 2 minutes. As the blender hums away, I take that moment to reach for my trusty 12-ounce glass, filling it to the brim with ice. With precision, I carefully strain the vibrant mixture into the glass using a simple strainer, the kind usually reserved for fruits or pasta. A final touch of effervescent club soda crowns the drink, creating a delightful fizz that suits my taste. Feel free to omit this step if it's not to your liking. Cheers to savoring this heavenly concoction as we navigate these uncertain times together. Here's to your well-being and that of your nearest and dearest.
